    frankly speaking the local kopitiam kopi is extremely unhealthy, half is corn, sugar, margarine and not pure coffee

    but kudos to the editor of challenging the establishment

    There are also market factors. a bidder for a kopi tiam cannot simply charge more for the food at the same standard as other kopi tiam. Why its not Fair market value. people will shun it and the stalls will suffer and the kopitiam wont survive.

    They would have to raise the stand of the kopitiam. to something else. restaurant etc. Much said the location must be able to support such business.

    I have witness corner HDB shop from a hardware shop to a malay kopi tiam to a internet cafe cum 24 hr 7 eleven like shop to a up class Zi Char aircon restaurant. but every 2-3 yrs the owners will change hands why? the location just cannot sustain the type of business. i.e. residence preference, human traffic etc.

    so the landlord can bid 100M charge neck breaking rent. if the business case is not solid they will loose the $. They can charge $5 for the kopi but if round the corner another shop sells 90cents.. the shop wont survive.

    A more successful kopi tiam transformation will be the corner kopit tiam opp I12. call AliBaBa. its a revamp that bring a different ambience and selective stalls. like the french start up food stall that was featured in the papers last Sunday.

    The beer at this revamp made the kopi tiam kind of a hybrid kopi tiam cum pub feeling. with reasonably good food choice.

    Common sense lah. 1 coffeeshop set record price, can tahan for 10 years, before 10 years up, all other coffeeshops also transacted at that record price if not higher!
    End results? Rental jack up & up!

    Isn't it the same we are see for industrial, commercial, retail properties rental nowsadays by those big boys who have the reserve to last for many years?

    You say cannot charge more? Why not?
    Even if don't charge more, can cut costs in places you cannot see, like smaller portion, use recycled oil (don't know how many donkey months!), use palm oil (instead of sunflower oil), recycle yesterdays' materials and ingredients, use cheap plastic material (not heat-safe) for ta-pao etc etc... More people will get cancer younger eating outside frequently (worst than dying instantly!)

    Cook:
    Singaporeans -> Malaysians -> Mainland Chinese -> Burmese / Sri Langkan

    Oil:
    50% palm -> 60% palm -> 70% palm -> 100% palm -> reuse 2x -> reuse 3x

    Good luck Singapore eating at food stalls or kopitiam

    Everytime a kopitiam or foodcourt re-renovated (change owner), price up 50 cents

    A 23m kopitiam ... 3y of inflation the price suddenly becomes reasonable, another 7y suddenly it becomes cheap

    M3 growth rate 9-10% !!! MAS keeps printing SGD against the rest of "easing currency" ... would Australia become the next bank to "ease"??

    If you order meat at economy rice stall, you might notice start start mixing vegetables to make up the amount.
